We love pancakes in the Mad House, they rock our world and as far as we are concerned they are not just for pancake day. Â What is pancake day those of you not in the UK ask? Well, it is the day before Lent – Shrove Tuesday, so we wanted to share with you some amazing pancake toppings.

We love crepe-style pancakes here – I follow the simple recipe in our bero book which my mum used and the ingredients are the same as Yorkshire puddings.
Pancake Recipe
Put 100g plain flour, 2 large eggs, 300ml milk, 1 tbsp vegetable oil and a pinch of salt into a bowl or large jug, then whisk to a smooth batter – it should be the consistency of single cream.
- Heat a frying pan or crepe pan if you are fancy over medium-high heat and add a bit of oil. When it begins to smoke stir the batter and pour a thin layer over the bottom of the pan.
- When the air bubbles start coming through and most of the pancake has started to colour leaving a thin white coating turn the pancake over.
- For the second side wait a few seconds and then check to see if nice and golden by lifting an edge.
I am a fan of lemon and sugar with berries either blueberries or strawberries as a topping where as it is raspberries for my husband.
