The best Carrot cake in the world – c is for carrot

Yes I know it is a big things to say, but this really is the best carrot cake in the whole wide world.  We have tried others and nothing comes close and other people have made out best carrot cake in the world and agree with us.

We do to even peel the carrots, just wash them and top and tail them.  This is a beautifully moist cake that is delicious and if you have kids that refuse carrots this will really turn them round.

This recipe is great for making with kids as you do it all the mixing by hand.

How to make the best carrot cake ever

We use our food processor to grate the carrots.  The boys have never had an accident with a grater, but I have skinned my fingers a couple of time!

Ingredients

  • 140 ml vegetable oil plus extra for greasing
  • 2 Eggs
  • 200 g light brown sugar
  • 300 g grated Carrots (grated weight)
  • 100 g raisins
  • 75 g pecans or Walnuts chopped (optional)
  • 180 g self-raising flour
  • 1 pinch Salt
  • 1/2 tsp Bicarbonate of soda
  • 1 tsp ground Cinnamon
  • 1/2 tsp freshly grated Nutmeg
  • 1/2 tsp Mixed spice

Instructions

  1. Preheat the oven to 150C/gas 2. Oil and line a loaf tin with greaseproof paper. I just use a silicone one.
  2. Beat the eggs in a large bowl, then add the oil, brown sugar, grated carrot, raisins and chopped nuts.
  3. Sift in the rest of the dry ingredients and bring the mixture together using a wooden or large metal spoon until well combined.
  4. Pour the mixture into the prepared loaf tin, smooth the surface and bake in the oven for 1 hour 15 minutes, or until until a skewer inserted into the middle comes out clean.
  5. Remove from the oven and allow the cake to cool in the tin for about five minutes before removing.
  6. Cool completely on a wire rack before serving.

And we also have a topping that we use for special occasions.  Most of the time the cake is eaten or started before I even get this on top of it!

50g cream cheese, chilled
50g Butter, at room temperature
1 tsp vanilla extract
275g icing sugar, sifted
1 Orange, zest only

Beat the cream cheese and butter together in a bowl until well combined. Add the vanilla extract, icing sugar and finely grated orange zest and mix until the icing is smooth and thick and top your cake with it.  this was a real challenge for Maxi and he tried to use a spatula at first but quickly moved on to a butter knife.

If you are feeling extra fancy then you can make some fondant icing carrots as decoration!
