Nasi Goreng or Indonesian fried rice as it is translated is one of our favorite ways to use up any cooked rice we have leftover. It is a great meal, that both the boys love and super simple to make. Plus you can add whatever you have in the fridge.
There is something perfect about fried rice topped with a fried or poached egg. It makes a delicious dressing and this is great either hot or cold.
Ingredients
- 250g cooked basmati rice (or 250g cooked and cooled basmati rice)
- 1 tablespoon oil
- 3 shallots, sliced into thinly or 4 spring onions sliced thinly
- 100g frozen peas
- 100g of frozen sweetcorn or a small tin of sweetcorn
- 1 red pepper finely chopped
- Chicken breasts (Optional)
- 1 egg per person
- Nasi Goreng paste to taste
Method
Heat the oil in a large frying pan or wok and fry the sliced shallots until golden and set aside.
Then add the paste to the oil before adding your meat (if using) and then add your vegetables and stir fry, keeping everything on the move.
Add the rice and mix well. When everything is piping hot, serve immediately topped with fried onion, spring onion.
We tend to top ours with a poached egg per person too.
