Nasi Goreng – Indonesian Fried Rice

Nasi Goreng or Indonesian fried rice as it is translated is one of our favorite ways to use up any cooked rice we have leftover.  It is the national dish of Indonesia and one both the boys love and super simple to make.  Plus you can add whatever you have in the fridge. Now this might not be a classic or cook from scratch meal, but it is a fun, fab and tasty one to cook with the kids and honestly, jars are not cheating especially when it comes to opening up new cuisine to people.

There is something perfect about fried rice topped with a fried egg or poached egg.  It makes a delicious dressing and this is great either hot or cold.

If you want to make the paste from scratch you will need shrimp paste (terasi which is to add umami flavour), garlic, sambal oelek (Indonesian chilli sauce), fish sauce, brown sugar, tamarind, tomato puree, soy sauce and kecap manis which is an Indonesian sweet soy sauce. It’s thicker and sweeter than normal soy sauce, with a consistency like syrup. If you are looking for a more authentic recipe then take a look here.

Traditionally, Nasi Goreng is topped with a runny fried egg and served with a few slices of fresh tomato and cucumber. I have one child who prefers poached egg!

Simple Nasi Goreng Recipe

Ingredients

  • 250g cooked and cooled basmati rice (or 250g cooked and cooled basmati rice)
  • 1 tablespoon oil
  • 3 shallots, sliced into thinly or 4 spring onions sliced thinly
  • 100g frozen peas
  • 100g of frozen sweetcorn or a small tin of sweetcorn
  • 1 red pepper finely chopped
  • Chicken breasts (Optional)
  • 1 egg per person
  • Nasi Goreng paste to taste

Method

Heat the oil in a large frying pan or wok and fry the sliced shallots until golden and set aside.

Then on a high heat add the paste to the oil before adding your meat (if using) and then add your vegetables and stir fry, keeping everything on the move.

Add the rice and mix well. When everything is piping hot, serve immediately topped with fried onion, and spring onion.

Recipe Notes

Use leftover or a day-old rice for the best result.

We make this with what ever leftover meat with have, pork is great and to mix things up prawns are amazing.

It is traditionally made with long green beans.
