OK I am going to admit I am not a doner kebab person at all, in fact I don’t think I have ever had one – I have tried a little, but I was veggie for 14 years, but all the men of the house LOVE them. So i decided to have a go at making our own fakeaway slow cooker doner kebab. I had seen lots of recipes for slow cooker meatloafs made from beef mince, so knew that it would be pretty OK, what I wasn’t prepared for was just how much the family enjoyed it.
I am passionate about getting kids in the kitchen and getting them cooking, and anything that makes that easier and simpler is great by me. So when Salter asked us to take a look at their revolutionary Salter Cook range, which includes the Salter Cook 10kg Pro Bluetooth Kitchen Scale and the Salter Cook Bluetooth Cooking Thermometer that links to their cooking app, we decided to adapt one of the recipes we found on the app and make chocolate shortbread.
As you know I am passionate about cooking with kids and one of the things that make me sad is that my boys can not learn to cook and bake with my mum like I did, especially as this coming Sunday 2nd October is Grandparents Day. But I am delighted to be working on this fab #CookSomethingGrand campaign about cooking with your grandkids.
There is a special place in heaven for kids that can bake amazing cakes. Not only that there is something wonderful about having a child that can pull off making the perfect victoria sponge cake. The queen of all cakes, a sponge cake can seem really simple, but can be tricky to get just right. The Vitoria Sponge is the perfect tea time winner and classic cake that has been around since Queen Victoria’s times. Delicious, simple and moreish and we like ours with strawberry jam and fresh cream, although a purist might tell you it should be jam only.
I love getting my kids in the kitchen and when we were invited by Angel Delight to design a dessert, well not a dessert exactly, but a character called delight. As a child of the 70’s I am going to admit I have a soft spot for Angel Delight and so do my boys. I had so much fun designing and putting together a kids dessert buffet.
Wednesday nights are our kryptonite. Both boys have to be at after school clubs and have other commitments, so dinner needs to be fast, filling and family friendly. Plus I go food shopping on a Thursday, so by Wednesday, we tend to be eating from the freezer and when McCain challenged us to make a simple midweek meal with their frozen sweet potato fries I decided to hand it all over to the boys.
One of the things that I find hardest as a mum is the constant feeding of my family. The planning, shopping, cooking, cleaning it away on a never ending loop. It is not that it is a difficult task, just that sometimes it is a thankless, never ended one and one that I find really easy to get stuck in a rut with. This recipe for Chinese Chicken is new to me and the family, but it is one that has already made it on to our regular menu plan. We have been making the most of a fabulous week of weather here in the North Yorkshire for the second week of the school Easter holidays (hence the lack of posting this week)! Holidays for us mean lots of family activities and lots of cooking and eating together. With two boys aged ten and nearly nine I have to make my food stretch and with these hacks for leftover food you will never throw any food away again!
Back in 2013 we visited LEGOLAND Florida twice, yes twice and one of the highlights for me was the Granny Smith apple fries, which are delicious cinnamon apple fries. I have tried to bake these fries and also attempted to cook them in the air fryer, but trust me you need to actually fry these in vegetable oil to get the crisp coating. The secret is to cook a few at a time in a really hot oil, that way the outside crisps and prevents the inside absorbing oil.
