I am always looking for versatile chicken recipes that can be adapted to my need to be garlic and onion-free. I have finally perfected this amazing recipe and it has quickly become a firm family favourite. It is a sticky sweet and savory flavor bomb of tender chicken and all of my family loves it.
Can I make Cola Chicken in the Slow Cooker?
Yes, you can. Add all the ingredients into the crock pot and cook on low for 8 hours, or high for 4 hours. However, the liquid will need thickening at the end to get the sticky sauce. I would do this by removing the lid and putting it on high until reduced by about half. Adding cornflour will not give the same result.

Can I use Diet or Zero Sugar Cola?
Yes, you can. I have used both Coca-Cola Zero and Pepsi Max and both have been delicious and worked well, so I see no worry about using Diet Coke.

Coca Cola Chicken
This is adapted from an American chicken wings recipe, but I tend to use it with boneless skinless chicken thighs or chicken breasts. If you are on a budget but prefer breast meat, Aldi Sell “cook from frozen chicken breasts” and they work so well. I have also added pork fillet too and served with noodles.
We often cook ham in Coke ala Nigella, so it doesn’t surprise me just how tender the coke makes the meat and also how delicious the sauce is!

I am a big fan of frozen chopped ginger, frozen sliced peppers and frozen chopped onions. I don’t believe they are cheating. I think that we should be able to take shortcuts where we can and frozen often has no added extras and it great value too.
This recipe is so adaptable that you can use lots of different vegetables depending on what is in season or what you have in your fridge, sugar snaps, baby corn, pak choy, broccoli or even carrot juliennes.

Cola Chicken
This is an absolute cracker of a fakeaway, the use of cola adds a real twist as it almost caramelizes through the cooking process. Packed with sweet and savoury Chinese flavour & goodness
Ingredients
- 4 chicken breasts diced
- 1 tsp Chinese 5 spice
- 1 tbsp Corn Flour
- 1 Onion Chopped
- 3 cloves garlic finely chopped
- 3 cm cm fresh ginger finely chopped
- .5 Tin chopped tomatoes
- 2 tbsp Worcestershire sauce
- 3 tbsp Dark soy sauce
- 1 tbsp Kecap Manis
- 2 tbsp Miran or rice vinegar
- 1 Red pepper cut into strips
- 1 green pepper cut into strips
- 1 Yellow pepper cut into strips
- Sugarsnap Peas
- 1 chicken stock cube
- 1 Can Coca-Cola Zero or Pepsi Max
Instructions
Mix the corn flour with the 5 spice and coat the chicken. We do this by placing it all in a zip lock bag and giving it a good shake.
Brown the chicken – either in an air fryer or in a frying pan with cooking spray
Remove the chicken and set aside.
Fry off the onions, garlic and ginger until they start to soften. As I am garlic and onion free, I substitute the onions for the greens of two bunches of spring onions and use froxen wild garlic. I am a big fan of frozen xhopped ginger and keep some in the freezer.

Add the tinned tomatoes, soy sauce, Worcestershire sauce, Kecap Manis, mirin and chicken stock cube and other vegetables, stirring thoroughly.
Add the Coke/Pepsi and bring to the boil.

reduce heat to a simmer and cook uncovered, for anout 10 minutes until the sauce stars to thicken.

Return the chicken to the pan simmer for another 10 to 15 minutes until the sauce has reduced by about 50% and become syrupopy.
- Simmer for another 10 minutes. Check the consistency and if it’s not quite thick enough simmer for a bit longer, until the required consistency is reached.

Check that the chicken is cooked by cutting a piece in half to ensure the meat is white all the way through

Storage
Place in an airtight container or ziplock bag once cooled and place in a refrigerator for approx 3 days.
This can be frozen for 3 months – to reheat allow to defrost in the fridge overnight and reheat thoroughly (microwave in a container with a loose fitting lid and heat for 4-7 minutes until piping hot).
Adaptations
You can substitute the sugar snap peas for baby corn, mushrooms, pak choy or endame beans.
