Who doesn’t love ice cream? We do in The Mad House and my favourite flavour is Pistachio and with this weeks cooking with kids ingredient being N for nuts we decided to have a go at no churn easy pistachio ice cream and wow, we were very impressed.
No churn ice cream is a great way to discuss the science of freezing with kids and we used our single serve Zoku ice cream maker (UK link/US Link) which we had been sent to review ()they are around £15 to buy).
How to make No Churn Easy Pistachio Ice Cream
Ingredients
50g shelled pistachios
75ml milk
500g golden caster sugar
150ml double cream
150ml ready-made custard
½ tsp almond extract
Method
Finely grind the pistachios in a food processor.
ip into a pan with the milk and sugar, and bring gently to the boil, stirring to dissolve the sugar.
Remove from the heat, leave to cool, then chill.
Whip the cream to soft peaks.
Fold in the custard, then the nut milk until evenly mixed.
Making the ice cream
As I said we have a Zoku Ice Cream Maker and it is fab for children. You pop the stainless steel inner bowl in to the freezer for at least 12 hours and then all you have to do is pour around 150ml of your ice cream base into the bowl and stir and scrape the sides using the spatula supplied. In ten minutes you will have soft serve ice cream.
You can then churn in an ice cream maker or put the bowl in the freezer until the mixture is set 5cm in from the edges. Remove and whisk to break down the large ice crystals. Freeze and whisk again, then transfer to a rigid container and freeze completely until firm.
