Crushed Jersey Royals is such a versatile recipe and there is something amazing about the contrast between the soft centres of the potatoes and the crispy golden outsides. We made ours with spring onions and chives, but I you could use garlic and parmesan too.

1kgJersey Royals
2 Tbsp Olive oil
1bunchappox 6 Spring onions (finely sliced)
Salt and pepper
15g Chives
Instructions
Boil the Jersey Royals for 20 minutes until just cooked.
Pour the oil into a large saute pan and heat.
Drain and dry the Jersey Royals.
Add to the Saute pan.
Crush the potatoes using a masher.
Season the potatoes.
Add the sliced Spring onions.
Cook for about 8 minutes until crispy and golden.
Sprinkle with the chopped chives.
Recipe Notes
If you are using an oven then heat to 200 degrees centigrade and cook for 30 minutes.
