Lemonade Scones

Ingredients

  • 300 g 2 cups self-raising flour
  • 55 g 1/4 cup caster sugar
  • 125 ml 1/2 cup thick cream Double cream
  • 125 ml 1/2 cup lemonade Sprite works just as well
  • milk to glaze

Instructions

  1. Preheat oven to 220°C (200°C fan) mark 7.
  2. In a large bowl mix all ingredients to make a dough.
  3. Knead briefly, then tip onto a floured surface and use your hands to press to a 2cm (3/4in) thickness.
  4. Line a baking tray with parchment.
  5. Stamp out rounds and place on tray.
  6. Glaze the tops with milk.
  7. Bake for 12-15min until golden.
  8. Cool on a wire rack.
