250gcooked and cooled basmati riceor 250g cooked and cooled Jasmin rice
1tablespoonoil
3shallotssliced into thinly or 4 spring onions sliced thinly
100gfrozen peas
100gof frozen sweetcorn or a small tin of sweetcorn
1red pepper finely chopped
Chicken breastsOptional
1egg per person
Nasi Goreng paste to taste
Instructions
Heat the oil in a large frying pan or wok and fry the sliced shallots until golden and set aside.
Then on a high heat add the paste to the oil before adding your meat (if using) and then add your vegetables and stir fry, keeping everything on the move.
Add the rice and mix well. When everything is piping hot, serve immediately topped with fried onion, and spring onion.
Traditionally the rice is topped with a fried egg, but as I said earlier I have one that prefers poached eggs!
Recipe Notes
Use leftover or a day-old rice for the best result.
We make this with what ever leftover meat with have, pork is great and to mix things up prawns are amazing.
