Tropical Fruit Parfait

This is a snazzy version of Maxi's staple which is granola, yoghurt and tinned mango!  It takes less than two minutes to make and is delicious.  I like to think that I am sat on a tropical island watching the turquoise waves hitting the sand when I eat this rather than cold dark Northern England.    And as a bonus canned fruit counts as one of your five a day!

Ingredients

  • Vanilla Yoghurt
  • Granola
  • can Mandarin Segments
  • can Mango Slices
  • dried fruit and nuts

Instructions

  1. Put 2 tablespoons of yoghurt in the bottom of each of the glasses. If you are doing this the night before then use a clean jam jar.
  2. Top with 4 orange slices. Sprinkle the oranges with 1 1/2 tablespoons of granola, followed by 2 more tablespoons of yoghurt. Top with sliced mango then with dried fruit and nuts.
  3. Pop the leftover fruit into a Tupperware in the fridge for the next day - as you can see Maxi got to the mango slices before I even made this.  Once the can is open in our house they never last!
